Garlic & Mint Lamb Skewers with Yogurt Sauce


8 Lamb Filets
2 Tbsp. Aegean Extra Virgin Olive Oil
⅓ Cup Castella Lemon Juice
2 Garlic Cloves (crushed)
2 Tsp. Castella Mint Leaves

Yogurt Sauce
1 Cup Thick Greek-Style Yogurt
1 Garlic Clove (crushed)

2 Cups Instant Couscous
2 Cups Chicken Stock
1 ½ Oz. Butter


  1. Put the lamb in a non-metallic bowl with the olive oil, lemon juice, garlic and mint.  Stir the pieces around until well coated and then season them with black pepper.  Cover and refrigerate for at least 4 hours, or overnight.
  2. Put the couscous in a heatproof bowl, drizzle with the olive oil and season well with salt.  Bring the chicken stock to a boil and pour over the couscous, then cover the bowl and leave for 10 minutes to absorb the stock. Very easy.
  3. Make the yogurt sauce by mixing the yogurt and garlic in a small bowl, drizzle with the olive oil and season well with salt.
  4. Soak eight wooden skewers in cold water for one hour, then thread the lamb onto them and season well.  Preheat the barbecue to medium-high direct heat and grill the skewers for about 3-4 minutes on each side, or until they are cooked to your liking.  Serve the skewers on a bed of couscous with the yogurt sauce.
