Mixed Nut Tartlets


10 ½ Oz. Mixed Nuts
3 Cups Plain All-Purpose Flour (sifted)
8 Oz. Butter (chopped)
3 Tbsp. Soft Brown Sugar
2 Tbsp. White Sugar
3 Tbsp. Light Corn Syrup
1 Oz. Butter (melted)
2 Eggs (lightly beaten)
½ Tsp. Regal Pure Vanilla Extract


  1. Preheat the oven to 350° degrees F.  Spread the nuts on a baking sheets and bake for 7 minutes.
  2. Place the sifted flour and butter in a food processor.  Pulse for 10 seconds, or until the mixture resembles fine breadcrumbs.  Add about ⅓ cup water and process until the mixture comes together.  Add another tablespoon of water if needed.  Turn out gently onto a lightly floured surface and gather into a ball.  Refrigerate for 20 minutes.
  3. Divide the pastry into 10 portions.  Roll each portion out on a lightly floured surface and line 1o fluted, 8cm (3 inch) flat tins.  Trim any excess pastry, then refrigerate for 10 minutes.  Put the tins on two baking trays.  Cut sheets of crumpled baking paper to line the base and side of each tin.  Place baking beads and paper and bake for 10-15 minutes.
  4. Divide the nuts among the pasty shells.  Whisk together the remaining ingredients and drizzle the mixture over the nuts.  Bake for 15-20 minutes or until just set and golden brown.  Allow to cool completely before serving.
