Marinated Olives


5.5 oz Castella Kalamata Olives
5.5 oz Castella Green Olives
¾ cup Aegean Extra Virgin Olive Oil
2 sprigs Rosemary
½ tbsp Castella Thyme Leaves
2 Small red chilies, seeded
Several strips of lemon zest
2 Garlic cloves
½ tsp Castella Fennel Seeds
1 Thyme sprigs, extra


  1. Place the olives, oil, rosemary, thyme, chilies, lemon zest, garlic and fennel in a large saucepan and warm over low heat. Transfer to a bowl and marinate overnight at room temperature.
  2. Remove the olives from the oil with a slotted spoon and discard the herbs, reserving the oil. Add the extra thyme to the olives before serving.

Makes 2 cups

(Serve the oil with bread)
