Grape Fritters with Cinnamon Sugar


3 Tsp. Castella Cinnamon Sugar
2 Eggs (separated)
½ Tsp. Regal Pure Vanilla Extract
¼ Cup Super Fine Sugar
5 ½ Oz. Seedless Black or Red Grapes
1 ½ Oz.  Un-Salted Butter
⅓ Cup Self-Rising Flour


  1. Whisk the egg yolks with the "Regal" Pure Vanilla Extract and sugar until combined and just creamy.  Slice each grape into four slices, and then stir the grape slices into the egg yolk mixture.  Beat the egg whites in a clean bowl until they are soft peaks.  Lightly fold half of the egg whites into the egg yolk mixture with a metal spoon until just combine, and then repeat the process with the rest of the egg whites.
  2. Melt 2 tsp. of the butter in a frying pan over a low heat.  Place 6 heaping tsp. of the batter into the pan to make 6 fritters.  Cook over a low-medium heat for 2-3 minutes, turning very carefully when the base becomes firm and bubbles appear around the edges.  Cook for a further 1-2 minutes, or until golden brown.  Remove them onto a plate and keep warm. Repeat to make 24 fritters.  Dust with the fritters with "Castella" Cinnamon Sugar and serve them warm.
