Fried Cheese


½ lb Castella Kefalotyri or Kaseri cheese
¼ cup all-purpose flour
1 tsp Castella Ground Black Pepper
Castella Blended Oil for frying
1 tbsp Castella Dried Oregano
2 tbsp Castella Lemon Juice plus lemon wedges for serving


  1. Cut cheese into slices (1/2 inch thick, about 3 inches long, 2 inches wide)
  2. Rinse cheese in cold water to remove excess salt then pat dry with paper towels.
  3. Spread flour on plate and season with pepper.
  4. Dip cheese pieces in the seasoned flour evenly coating each side
  5. In a large saute pan pour in oil to a depth of about ¼ inch. Place over high heat until very hot but not smoking.
  6. Carefully slip pieces of cheese into hot oil and fry, turning until golden brown on both sides (about 2 minutes preside)
  7. Using a slotted spoon , transfer the cheese to paper towels to drain. Keep warm until all pieces are cooked.
  8. Arrange cheese on warm platter and sprinkle with oregano and lemon juice.
