Cucumber Cups


2 Cucumbers
1 small Red Onion, diced
1 small Red Pepper, diced
1 Vine Ripened Tomato, diced
1/4 cup Castella Kalamata Olives, diced
1/4 cup Castella Greek Feta Cheese, crumbled
1/4 cup Fresh Dill
1/2 tsp Castella Oregano Leaves
1 tbsp Castella Lemon Juice
2 tbsp Aegean Extra Virgin Olive Oil
Salt and Pepper to taste


  1. Cut cucumbers about 1" long, hollow out the seeds, leaving a "bottom" on the cup.
  2. Combine all remaining ingredients in a bowl.
  3. Season with salt and pepper.
  4. Fill cups with mixture.
